Sossi Githeri with Sossi Tasty Pieces

Ingredients
- Sossi tasty soya pieces 180g
- 500g died yellow beans
- ¾ cup fresh green maize (optional muthokoi/dry maize)
- 2 table sp cooking oil
- 1 large onion
- 2 large potatoes
- 2 carrots
- 2 large tomatoes
Instructions
- Soak the beans overnight, alternatively boil them for 1 hour.
- Add the maize to the beans. Boil for a further 45 minutes until tender to form githeri.
- Heat the oil in a separate saucepan, add the diced onion and fry gently until tender.
- Add the Sossi tasty soya pieces and fry for two minutes or until it changes colour, add the chopped tomatoes, carrots and potatoes stirring vigorously, add a little water, cover and cook for about ½ hour on low heat.
- Add githeri to the stew and cook for about another ten minutes. Serve hot.
- Ready to eat. Serve with some greens on the side.
