Sossi Githeri with Sossi Tasty Pieces


Serves 8
Cooking time app, 1,5 hours

Ingredients

  • Sossi tasty soya pieces 180g
  • 500g died yellow beans
  • ¾ cup fresh green maize (optional muthokoi/dry maize)
  • 2 table sp cooking oil
  • 1 large onion
  • 2 large potatoes
  • 2 carrots
  • 2 large tomatoes

Instructions

  • Soak the beans overnight, alternatively boil them for 1 hour.
  • Add the maize to the beans. Boil for a further 45 minutes until tender to form githeri.
  • Heat the oil in a separate saucepan, add the diced onion and fry gently until tender.
  • Add the Sossi tasty soya pieces and fry for two minutes or until it changes colour, add the chopped tomatoes, carrots and potatoes stirring vigorously, add a little water, cover and cook for about ½ hour on low heat.
  • Add githeri to the stew and cook for about another ten minutes. Serve hot.
  • Ready to eat. Serve with some greens on the side.
