Sossi Matoke

Matoke are sometimes referred to as plantains, rather than bananas because they are eaten after cooking. It can be prepared with meat or without. In this case we have prepared them with Sossi soya.

Sossi Matoke

Matoke are sometimes referred to as plantains, rather than bananas because they are eaten after cooking. It can be prepared with meat or without. In this case we have prepared them with Sossi soya.

INGREDIENTS

  • - Sossi 90g;
  • - 1 large onion – chopped;
  • - 1 hoho – chopped;
  • - 3 medium tomatoes – chopped ;
  • - 3 carrots – chopped;
  • - 9 green bananas – peeled & cubed;
  • - 5 large potatoes – peeled & cubed;
  • - 1 bunch of dhania – chopped;
  • - 4 tablespoons cooking oil. Salt to taste.
  • METHOD

    1. Soak 90g Sossi in a medium size cup (200 ml) of cold water until all the water has been absorbed by the chunks (10 mins);
    2. Heat the oil in a sufuria, add the chopped onion and fry gently until tender (2 mins);
    3. Add the hoho, tomatoes, dhania, carrots and salt and cook (10 mins);
    4. Add bananas, potatoes and water (400 ml);
    5. Add Sossi and cook until bananas and potatoes are soft (10 mins).
